"The 2017 Chablis Vaillon 1er Cru is a very pretty wine that can be enjoyed with minimal cellaring. Apricot, lemon confit, chamomile, mint and dried flowers all grace this attractive, inviting Chablis. Floral notes develop later, adding lift and brightness, while saline underpinnings lend a palpable sense of energy. This is such a terrific expression of Vaillon. In 1814, Jean Joseph MOREAU, a "tonnelier" from Montbard, founded the wine-merchant and trading firm, J. Moreau et Fils, in Chablis. In 1974, the MOREAU family decided to give the Canadian company, Hiram Walker, a 50 percent stake in their company, and, in 1985, transferred the remaining shares to them. The firm J. Moreau et Fils was then sold to the the wine-trading company Boisset de Nuits Saint-Georges since then no one in the family has been part of the company.
After 11 years in Canada, Christian MOREAU returned to Chablis with his Canadian wife, Christine, and their three sons, Philippe, Patrick and Fabien. Under the guiding hand of his father Guy, Christian began to learn and master the art of winemaking.
Fabien, a member of the sixth generation of the family to be involved in winemaking, obtained his National Degree in Oenology in Dijon and a Masters in Business Administration at the E.N.I.T.A in Bordeaux. He then went to New Zealand for a year to study the country's winemaking practices. In December 2001, Fabien returned to Chablis and took over as Managing Director and Head Winemaker at the Domaine Christian MOREAU Pere et Fils. With the 2002 vintage, the Christian Moreau family regained their full rights. Over the last decade, the family has taken their Chablis to a different level.
It’s not just the purity of Chardonnay or the structure of the wines, thanks to kimmeridgien calcerous clay which goes back to the upper jurrassic age or, the purity of expression because a true Chablis is ‘unoaked’, it’s how smoothly these all come together in a great Chablis.
Domaine Christina Moreau’s Chablis vineyards are certified organic and are located in the village of Chablis in the very heart of Chablis country, on the left bank of the Serein River, with a south-south east exposure. The fruit is hand harvested from vineyards. It is then carried on small trailers which unload the grapes by vibration to avoid crushing. A sorting table then helps eliminate unripe or damaged grapes.
Average age of the vines for Vaillon Premier Cru is 56yrs. For ageing, 65% is in stainless steel vats with temperature-controlled fermentation and 35% in barrles (90% in 1,2 and 3 years old barrels, 10% in new and 1 year old barrels) for a period of 6 months.
